molecular cuisine is basically using science to create food. One big thing is the study of how to cook an egg yolk, for example at 63 degrees its still kind of liquid, at 65 more of a pomade. In molecular cuisine you can use organic chemicals like sodium alginate and calcium cholride to make almost any liquid into tiny pearl with a thin outer membrane and a liquid centre. Think El Bulli

Fave Picture At last, vietnamese food in Thornhill - and in Thornhill Woods no less! (It's actually pan-asian, including cantonese, szechuan and thai also.) Anyhow, there's pho, vietnamese egg rolls and more, including vietnamese fruit drinks, teas and milkshakes. Just opened in June 2008, so still new, great prices and great food.
